Christina’s Story…

Growing up with a talented cook for a mother, I’ve always loved food. From an early age I was conscious of the need to eat healthily. In those days it was all about meat and two veg, no matter how fancy the meal was… Vegetarianism was for crusty types with baggy clothes, whispy beards and Jesus sandals. Veganism was unheard-of! That was Yorkshire, back in the 70s.

I only really began to experiment with food when I went away to uni and came up with various creative concoctions, some more successful than others. It was here that I began the morphosis from chilli and bolognese-scoffing student to health food fanatic, and I confess to more than the occasional bout of militantism (poor long-suffering family!!).

My degree of engagement in the various food debates waxed and waned over the next decade or so, but my attention on diet was brought back into sharp focus in 2010 when I was diagnosed with stage III Lymphoma.

Out came the juicer and the mandolin (the lethal variety, not the tuneful one), and I started packing myself full of superfoods, researching polysaccharides, bioflavanoids, anti-oxidants, lycopene, alkalinity vs acidity, green food diets, raw food diets…you name it!

Although I did 6 months of pretty heavy-duty chemo, my immune system remained robust, I had very little nausea and after each cycle my energy levels bounced back to normal after a couple of days. More importantly, I’ve been cancer-free since August 2010.

You’d be forgiven for thinking that by now I must be bouncing all over the place with all those lovely micro-nutrients whizzing round my body, right? Wrong!

Two more uglies popped their heads up:

1) Gastritis. Very painful - almost ever-present heartburn, lack of appetite, feeling as though there was a lump in my throat, stabbing pains in my stomach… Prescribed Lansoprazole, I looked at the long list of side-effects and said ‘No thanks!’.  After a little research, I found that the Hay Diet helped (no, not eating hay! - a method of food-combining for optimum nutrient absorption) and the symptoms disappeared after a few days. However, I still found myself lacking in energy after meals, feeling full and bloated on occasion, just not as vital as I knew I should be - even though I was supporting my adrenals, getting 8 hours’ sleep, doing yoga every day etc. So…

2) I did an allergy test and found that I was intolerant to

wheat yeast

eggs almonds

casein mangoes

Back to the drawing board for me! Luckily, it only took a few tweaks to adjust to this new status quo. Nowadays I feel clear-headed, much more energetic and I’m lighter in mind, body & spirit.

The more I talk with people, the more common these experiences seem to be. What’s Eating You?! is born out of sharing similar experiences with so many people, all looking for information, tips, recipes and products which can support them on their journey to optimum wellness.
